Recipe| stuffed butternut squash

Hi everyone, I'm back with another recipe yaay!

I'm trying to eat better this year so I'm including more vegetables in my daily cooking.

We are having Butter squash today.

I read that butternuts are low in carbs and high in vitamins. I tried including them in my cooking earlier but did not really like the sweetness and the texture they have.

Today I decided to cook it differently and the result was delicious so I'm sharing.



  • Start by washing a medium size butternut, cut it in 3 and remove all the seeds. It should look like the picture above.
  • Pour a tea spoon of freshly squeezed lemon juice on them and massage it onto the butternut's flesh
  • Add a tea spoon of salt and massage it on as well.
  • Add a big pinch of dry parsley, black pepper, cayenne pepper,  a tea spoon of freshly grated garlic, 1/2 tea spoon of freshly grated ginger and massage it all on the butternut's flesh.
  • Add a table spoon of oil and cover for 2 hours. It should look like this:


While the butternut's pieces are marinating,

Put enough minced beef meat for 3 persons in a bowl. Add salt, black pepper, fresh curry leaves, freshly grated garlic, a tea spoon of hot Dijon mustard.
Mix everything well.

Transfer the seasoned meat that you just did in the bowl in a pot and put it on high heat.
Let it sweat...
Stir from time to time until the water totally evaporates and the fat in the meat starts to fry the meat.

Add a diced onion and stir until the onion becomes transparent .
Add fresh chopped parsley and one diced radish.
Stir for 5 more minutes and remove the pot from the stove . Allow to cool down.
Add a cup of grated Mozzarella cheese into the cooked mince and mix.

Put the butternuts in the oven and bake until the flesh softens.

Remove the baked butternuts from the oven and put a slice of cheddar cheese in each of them.
Then, fill them up with the mozzarella/mince mixture.

Place the filled butternuts in the oven again for 5 minutes until the surface starts to golden.

Remove from oven and enjoy :)

  1. Coucou Mélissa d'habitude je manges ce légumes dans du couscous mais pourquoi pas? à testé çà a l'air bon merci du partage bisous :)

    1. Coucou Marie line jespere que tu aimeras, je ne l'aime pas ce legume parcequ'il est sucre. Mais prepare de cette facon c'est excellent :)
